Price conference late Monday so my choices for lunch today were limited.\u00a0 I had one boiled egg and one good avocado left in the refrigerator, so what could I do with those. \u00a0 Egg salad came to mind but I wasn&#8217;t sure about adding an avocado.\u00a0 Anyway, I decided to try it, and it turned out to be delicious and satisfying, as well as healthy.\u00a0 Interesting looking too&#8211;pale green egg salad.<\/p>\n<p>Here&#8217;s how I put it together:<\/p>\n<p><strong>Avocado Egg Salad<\/strong><\/p>\n<p>1 boiled egg, chopped (preferably from pastured chickens)<br \/>\n1 small organic Haas avocado<br \/>\n1 to 2 tablespoons homemade mayonnaise (<a title=\"Homemade Mayo\" href=\"http:\/\/kellythekitchenkop.com\/2009\/06\/homemade-mayonnaise-recipe-that-tastes-great-finally.html\" target=\"_blank\" rel=\"noopener\">from Kelly the Kitchen Kop<\/a>)<br \/>\nSea salt (Celtic Sea Salt) to taste<br \/>\nFreshly ground organic black pepper to taste<\/p>\n<p>In a small mixing bowl, mash avocado with a fork.\u00a0 Add chopped boiled egg, mayonnaise, salt and pepper.\u00a0 Combine well.<\/p>\n<p>I ate my salad with organic grape tomatoes and organic baby greens.<\/p>\n<p>I had made the mayonnaise the day before, but it failed, and I was so thankful that Kelly had found a way to <a title=\"Save the mayo\" href=\"http:\/\/kellythekitchenkop.com\/?s=mayonnaise\" target=\"_blank\" rel=\"noopener\">save the mayo<\/a>.\u00a0 It worked!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I hadn&#8217;t done much grocery shopping since coming home from the Weston A.
