butter sandwich\" width=\"300\" height=\"230\" \/><\/a>If you love sardines <em>and<\/em> butter\u00a0(and I do!) then you will really like this recipe.\u00a0 It&#8217;s quick and easy but it&#8217;s also REAL FOOD.\u00a0 I found this recipe in a gem of a cookbook bargain, on sale at Half Price books for only $2.00.\u00a0 The cookbook is <em>Real Fast Food<\/em> by <a href=\"http:\/\/www.nigelslater.com\/home.asp\" target=\"_blank\" rel=\"noopener\">Nigel Slater<\/a>.\u00a0 His book is still popular and can be bought online, but the best\u00a0price I found was $3.38 and there probably would be shipping charges.\u00a0 I was sure lucky.\u00a0 Most of the recipes are made with REAL FOOD and the author says they can all be made in 30 minutes or less.<\/p>\n<p>Sardines are full of nutrients like calcium, potassium, protein, and healthy Omega 3 fats.\u00a0 My favorite way to eat sardines used to be with mustard, but I think sardine butter is my new favorite.<\/p>\n<p>Here&#8217;s what I did with Nigel Slater&#8217;s\u00a0recipe for Sardine Butter:<\/p>\n<p>Drain one can of sardines in extra virgin olive oil and use a fork to mash with about an equal amount of room temperature butter.\u00a0 It mixes very easily.\u00a0 Add a squeeze of organic lemon juice, a dash of sea salt, and freshly ground organic black pepper.\u00a0 I ate my delicious sardine butter on a sandwich made from a sliced coconut flour biscuit.\u00a0 The biscuit was made with Bruce Fife&#8217;s recipe in <em>Cooking with Coconut Flour<\/em>,\u00a0but reducing the honey to about a teaspoon&#8211;I don&#8217;t like my bread too sweet.\u00a0 I added a slice of aged cheddar cheese, but it&#8217;s good enough to eat without cheese.<\/p>\n<p>Nigel Slater says that the sardine butter can be used in many ways&#8211;topping for a baked potato, stirred into pasta, or on a sandwich with sliced cucumber (that sounds good, I will have to try that too).\u00a0 It was also\u00a0good just eating by the spoonful.<\/p>\n<p>Brands Used:<\/p>\n<p>I used\u00a0Celtic Sea Salt and\u00a0Wild Planet sardines\u00a0in a BPA-free
