{"id":2072,"date":"2012-02-21T16:32:00","date_gmt":"2012-02-21T22:32:00","guid":{"rendered":"http:\/\/realfoodhouston.com\/?p=2072"},"modified":"2022-02-27T17:15:50","modified_gmt":"2022-02-27T23:15:50","slug":"why-would-anyone-bother-to-eat-just-the-white-of-an-egg","status":"publish","type":"post","link":"http:\/\/www.realfoodhouston.com\/wp-files\/2012\/02\/21\/why-would-anyone-bother-to-eat-just-the-white-of-an-egg\/","title":{"rendered":"Why would anyone bother to eat just the white of an egg?"},"content":{"rendered":"<p><span style=\"font-family: Arial;\"><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/02\/RawEgg.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-2078\" title=\"Raw Pastured Egg\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/02\/RawEgg-300x239.jpg\" alt=\"Raw Pastured Egg\" width=\"300\" height=\"239\" \/><\/a>February is Heart Health Month and many stories have popped up about how to &#8216;eat healthy&#8217; to avoid cardivascular disease.\u00a0 Unfortunately most of the articles have been written by people who have not been keeping up with the latest research about what\u00a0 really causes heart disease.\u00a0 They are still pushing the old tired, outworn, and proven false myths about cholesterol and saturated fat.<\/span><\/p>\n<p><span style=\"font-family: Arial;\">Here&#8217;s a typical\u00a0Heart Health Month recommendation from the Canadian Heart and Stroke Foundation:\u00a0a &#8216;heart-healthy&#8217; breakfast of an egg-white souffl\u00e9, made with egg whites only, fake butter (margarine), and pseudo milk (skim), plus a little white flour and seasonings.\u00a0 This breakfast is not only <em><strong>not<\/strong><\/em> &#8216;heart-healthy&#8217;\u00a0there&#8217;s almost\u00a0no nutrition in it.\u00a0 In case you&#8217;ve forgotten, Chris Masterjohn has provided us with an analysis of the nutrients in an egg:\u00a0100% of the carotenoids, essential fatty acids, and vitamins A, E, D, and K are\u00a0in the egg yolk&#8211;that&#8217;s right,\u00a0<strong><em>not any\u00a0<\/em><\/strong>of these nutrients are in the white.\u00a0 On top of that, the yolk also has over 90% of the calcium, iron, phosphorus, zinc, thiamin, B6, folate, and B12.\u00a0 By weight (the yolk is only about 75% of the\u00a0size of the white) the yolk even has more protein than the white.\u00a0 In fact, Chris lists only\u00a0three nutrients that, proportionately, an egg white has more of&#8211;magnesium, sodium, and niacin&#8211;and two of these, magnesium and sodium, only by a small amount.\u00a0 The white by itself <em>doesn&#8217;t even taste very good<\/em>.\u00a0 When you eat Real Foods, taste does count.\u00a0 I guess that&#8217;s why this recipe\u00a0added so many seasonings.\u00a0 So tell me, why in the world would anyone bother to eat just the white?\u00a0 If you didn&#8217;t want the\u00a0yolk for some reason, wouldn&#8217;t you just eat something else besides an egg white?\u00a0<\/span><\/p>\n<p><span style=\"font-family: Arial;\">Many studies have confirmed that eating eggs, in fact any dietary cholesterol,\u00a0has little effect on blood levels of cholesterol and no\u00a0correlation\u00a0with heart disease.\u00a0 Pastured eggs are even more healthy than\u00a0factory-farm eggs: they\u00a0have 2\/3 more vitamin A, 2 times more omega-3 fatty acids, 3 times more vitamin E, and 7 times more beta carotene.\u00a0 So eggs are good and pastured eggs are, as Dr. Mercola says it, superfoods.<\/span><\/p>\n<p><span style=\"font-family: Arial;\">Sources:<\/span><\/p>\n<p><a href=\"http:\/\/www.brandonsun.com\/lifestyles\/breaking-news\/heart-healthy-recipes-egg-whites-for-breakfast-lunch-salad-fish-for-dinner-139712053.html?thx=y\" target=\"_blank\" rel=\"noopener noreferrer\">Heart-healthy recipes: Egg whites for breakfast, lunch salad, fish for dinner<\/a><br \/>\n<a href=\"https:\/\/chrismasterjohnphd.com\/blog\/2005\/07\/01\/the-incredible-edible-egg-yolk\/\" target=\"_blank\" rel=\"noopener noreferrer\">The Incredible, Edible Egg Yolk<\/a>\u00a0by Chris Masterjohn<br \/>\n<a href=\"http:\/\/www.cholesterol-and-health.com\/Does-Cholesterol-Cause-Heart-Disease-Myth.html\" target=\"_blank\" rel=\"noopener noreferrer\">High Cholesterol And Heart Disease \u2014 Myth or Truth?<\/a>\u00a0by Chris Masterjohn<br \/>\n<a title=\"Enjoy Saturated Fats, They're Good For You!\" href=\"http:\/\/lewrockwell.com\/miller\/miller38.1.html\" target=\"_blank\" rel=\"noopener noreferrer\">Enjoy Saturated Fats, They&#8217;re Good For You!<\/a> by Donald W.
