corn\" width=\"640\" height=\"630\" \/><\/a>This edition of What&#8217;s for dinner?\u00a0is another of my favorite kind of meal&#8211;traditional, easy, nutritious, and oh so delicious!\u00a0 REAL comfort FOOD!\u00a0 I&#8217;ve been making pot roasts like this for many years but now I\u00a0use local grassfed beef and organic vegetables whenever possible.\u00a0 Here&#8217;s how I made dinner:<\/p>\n<p><em><strong>What you need:<\/strong><\/em><\/p>\n<p>1 grassfed beef chuck roast, preferably bone-in<br \/>\n1 &#8211; 2 potatoes, cut into chunks<br \/>\n2 &#8211; 3 carrots, chopped<br \/>\n1 onion, chopped<br \/>\n1 &#8211; 2 tablespoons coconut oil, for browning meat<br \/>\n1-1\/2 cups filtered water<br \/>\n1\/2 cup red wine<br \/>\nSea salt, about 1\/2 to 1 teaspoon<br \/>\nFreshly ground black pepper<\/p>\n<p><em><strong>How to prepare the roast:<\/strong><\/em><\/p>\n<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/06\/Pot-roast-after-adding-veggies.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-2954\" title=\"Pot roast &amp; veggies in the pot\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/06\/Pot-roast-after-adding-veggies-300x223.jpg\" alt=\"Pot roast &amp; veggies in the pot\" width=\"300\" height=\"223\" srcset=\"http:\/\/www.realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/06\/Pot-roast-after-adding-veggies-300x223.jpg 300w, http:\/\/www.realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/06\/Pot-roast-after-adding-veggies.jpg 1031w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>Melt coconut oil in large pot (this was a fairly small roast so I used a 4 quart pot) over medium heat.\u00a0 Brown meat on all sides.\u00a0 Add red wine, water, salt, pepper, and onion to the pot.\u00a0 Bring to a good simmer, cover pot, and simmer for about 2-1\/2 hours.\u00a0 Add chopped potato and carrot; simmer for about 30 more minutes.<\/p>\n<p><em><strong>Corn-on-the-cob:<\/strong><\/em><\/p>\n<p>A pot roast is really a meal in itself with the potatoes, carrots, and broth, but for this meal I added corn-on-the-cob, a rare treat I&#8217;ve loved all my life.\u00a0 My granddad had a backyard garden when I was very small and\u00a0I still remember very well\u00a0how good the corn was when\u00a0fresh from the garden.\u00a0 I grew up in the suburbs so\u00a0fruits and vegetables\u00a0from granddad&#8217;s garden were the only home-grown foods I had.\u00a0 The Saturday before making this pot roast, I had found fresh (not dried out) organic corn at my local nutrition center (Erma&#8217;s in Nassau Bay).\u00a0 Yep, this corn was very good&#8211;it lived up to my memories.<\/p>\n<p>To prepare the corn, I removed the shucks and silk and snapped the large ears in half.\u00a0 I put them in a pot with filtered water to cover and brought it to a boil.\u00a0\u00a0I\u00a0removed the pot\u00a0from the heat and let\u00a0it sit, covered,\u00a0for about 5 minutes.\u00a0 As you can see, I served the corn with a large pat of butter to melt all over the hot corn.<\/p>\n<p><em><strong>Leftover soup:<\/strong><\/em><\/p>\n<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/06\/Pot-roast-leftoer-soup.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-2955\" title=\"Pot roast leftover soup\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/06\/Pot-roast-leftoer-soup-300x252.jpg\" alt=\"Pot roast leftover soup\" width=\"300\" height=\"252\" srcset=\"http:\/\/www.realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/06\/Pot-roast-leftoer-soup-300x252.jpg 300w, http:\/\/www.realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/06\/Pot-roast-leftoer-soup.jpg 913w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>Of course, pot roast is such a good excuse for one of our favorite dishes later in the week&#8211;<em>leftover soup<\/em>.\u00a0 Here&#8217;s what I put into the soup pot:\u00a0cubed beef, potatoes, and carrots from the roast, some cut up green beans leftover from another meal, the beef juices (which had gelled nicely), chicken juices (also gelled)\u00a0and fat leftover from a roast chicken, and a large can of diced tomatoes.\u00a0 I simmered the soup for about 20-30 minutes.\u00a0 We usually eat beef leftover soup with a dollop of drained yogurt or sour cream and\/or grated cheese.\u00a0 UMMM
