{"id":3282,"date":"2012-08-06T08:39:53","date_gmt":"2012-08-06T13:39:53","guid":{"rendered":"http:\/\/realfoodhouston.com\/?p=3282"},"modified":"2012-08-06T08:40:42","modified_gmt":"2012-08-06T13:40:42","slug":"food-treasures-at-houstons-revival-market","status":"publish","type":"post","link":"http:\/\/www.realfoodhouston.com\/wp-files\/2012\/08\/06\/food-treasures-at-houstons-revival-market\/","title":{"rendered":"Food Treasures at Houston&#8217;s Revival Market"},"content":{"rendered":"<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/08\/Grilled-ham-cheese.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-large wp-image-3286\" title=\"Grilled ham &amp; cheese\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/08\/Grilled-ham-cheese-1024x768.jpg\" alt=\"Grilled ham &amp; cheese\" width=\"640\" height=\"480\" srcset=\"http:\/\/www.realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/08\/Grilled-ham-cheese.jpg 1024w, http:\/\/www.realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/08\/Grilled-ham-cheese-300x225.jpg 300w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a>My husband and I visited <a href=\"http:\/\/revivalmarket.com\/\" target=\"_blank\">Revival Market<\/a> last Friday.\u00a0 I get their newsletter and am always amazed at the wide selection of pastured pork, grassfed beef, and other meats, but they also have other food treasures.\u00a0 We were really hungry when we arrived so our first task was to order lunch.\u00a0 I chose the Farmstead grilled cheese with caramelized onions on Slow Dough harvest sour dough bread plus the optional Revival Market ham.\u00a0 I chose the ginger lime slaw as my side.\u00a0 <a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/08\/Porchetta.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-thumbnail wp-image-3289\" title=\"Porchetta\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/08\/Porchetta-150x150.jpg\" alt=\"Porchetta\" width=\"150\" height=\"150\" \/><\/a>My husband opted for the special of the day&#8211;Mangalitsa porchetta with marinated peaches and celery salad.\u00a0 His side was cucumber salad.\u00a0 Of course, we shared a taste of each.\u00a0 My grilled cheese was exactly like I like it&#8211;toasted crispy with runny, melty cheese and the ham made it even better.\u00a0 The slaw, which I&#8217;ve had before, was fresh and crunchy.\u00a0 My husband&#8217;s Mangalitsa porchetta was really super&#8211;lots of soft, creamy fat layer with tender pork.\u00a0 I thought the marinated peaches were a nice tart, sweet taste that complimented the porchetta very nicely.\u00a0 I had the Hibiscus herbal tea and my husband had the regular black tea.<\/p>\n<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/08\/Sausages.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-thumbnail wp-image-3291\" title=\"Sausages\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/08\/Sausages-150x150.jpg\" alt=\"Sausages\" width=\"150\" height=\"150\" \/><\/a>Although lunch was really special, one of the things I like best about Revival Market is the supply of other goodies in the store that you can take home with you.\u00a0 Many are items that are difficult, if not impossible, to find anywhere else.\u00a0 We bought some house-made fresh pork sausages&#8211;breakfast and bratwurst&#8211;a small jar of sorghum syrup, and a loaf of sourdough bread.\u00a0 I grew up in Tennessee at a time when sorghum was fairly common, but it&#8217;s harder to find traditional sorghum syrup today.\u00a0 The staff at Revival Market said that their sorghum was made by hand the old-fashioned way on a small family farm.\u00a0 I don&#8217;t use much sweetener but wanted to try this one as a reminder of years ago. I haven&#8217;t tasted it yet&#8211;I will let you know about that later.<\/p>\n<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/08\/Meat-counter.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-thumbnail wp-image-3292\" title=\"Meat counter\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/08\/Meat-counter-150x150.jpg\" alt=\"Meat counter\" width=\"150\" height=\"150\" \/><\/a>The centerpiece of Revival Market is the meat from\u00a0<a href=\"http:\/\/revivalmeats.com\/\" target=\"_blank\">Revival Meats<\/a> in Yoakum, TX.\u00a0 Revival Meats raises heirloom breeds of pigs (including <a href=\"http:\/\/en.wikipedia.org\/wiki\/Mangalitsa\" target=\"_blank\">Mangalitsa,<\/a> known for its juicy, flavorful meat and high fat content), <a href=\"http:\/\/revivalmeats.com\/veal\/roseveal.html\" target=\"_blank\">roseveal<\/a>, and grassfed and grass-finished <a href=\"http:\/\/revivalmeats.com\/beef\/about.html\" target=\"_blank\">Revival beef<\/a>.\u00a0 Revival Meats explains its vision this way:\u00a0 The owners want to reach &#8220;back to the past, to restore values and ideals deeply steeped in family tradition, following a model of small-scale, humane, and truly sustainable agriculture.&#8221;\u00a0 Other sources of featured meats include <a href=\"http:\/\/www.realtimefarms.com\/farm\/9207114\/shudde-ranch-natural-grass-fed-beef\" target=\"_blank\">Shudde Ranch Natural Grass-fed Beef<\/a> and <a href=\"http:\/\/augustusranch.com\/\" target=\"_blank\">Augustus Ranch Meat Co.<\/a>\u00a0 More unusual meats are also often available, like antelope, duck, rabbit, and <a href=\"http:\/\/en.wikipedia.org\/wiki\/Red_Wattle\" target=\"_blank\">red wattle<\/a> (featured this week).<\/p>\n<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/08\/Chicken-stock.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-thumbnail wp-image-3293\" title=\"Chicken stock\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/08\/Chicken-stock-150x150.jpg\" alt=\"Chicken stock\" width=\"150\" height=\"150\" \/><\/a>If you want to eat healthy, nutrient-dense foods, but don&#8217;t have enough time to cook or you simply want a break from the effort required to prepare your own, Revival Market has some ready-to-eat, nutritious foods, both house-made and carefully selected from other producers.\u00a0 Revival Market makes their own chicken stock (slow cooked with lots of bones); traditionally rendered lard; and in-house made ready to eat dishes like grassfed beef meat loaf, roast chicken with okra and cherry tomatoes, grassfed beef pot roast, roasted green beans with house made salami, duck dumplings, and braised beef shank.\u00a0 Revival Market also stocks fresh local vegetables and fruits; J. Stoops<\/a> to develop a market for these truly fresh bycatch fish.\u00a0 This past weekend, P. J.
