{"id":3923,"date":"2012-10-25T20:40:06","date_gmt":"2012-10-26T01:40:06","guid":{"rendered":"http:\/\/realfoodhouston.com\/?p=3923"},"modified":"2018-10-25T12:56:53","modified_gmt":"2018-10-25T17:56:53","slug":"persimmon-kefir-smoothie","status":"publish","type":"post","link":"http:\/\/www.realfoodhouston.com\/wp-files\/2012\/10\/25\/persimmon-kefir-smoothie\/","title":{"rendered":"Persimmon Kefir Smoothie"},"content":{"rendered":"<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/10\/Persimmon-kefir-smoothie.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-3937\" title=\"Persimmon kefir smoothie\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/10\/Persimmon-kefir-smoothie-250x300.jpg\" alt=\"Persimmon kefir smoothie\" width=\"250\" height=\"300\" \/><\/a>Persimmons are in season here in Texas, and, can you believe it, I had never tried one before!\u00a0 One of my favorite backyard farmers at my local farmers market had some beautiful bright red-orange persimmons and encouraged me to take a few.<\/p>\n<p>They had two different varieties, a smaller flatter one and a larger rounder one (I don&#8217;t know the names).\u00a0 I was told that the smaller flatter one is ripe when the color is bright but not to wait for it to get soft.\u00a0 The larger ones should be almost mushy to be really ripe and sweet.\u00a0 I ate half of a round one by just slicing it in half then scooping out the flesh with a spoon.\u00a0 The flatter ones should be peeled and eaten out of hand.\u00a0 Please do this over a counter, table, or paper towel.\u00a0 Fresh ripe persimmons are VERY juicy.\u00a0 I loved both types.\u00a0 I&#8217;m glad I&#8217;ve discovered a new, local fruit.<\/p>\n<p>Although persimmons are very good eaten fresh, I thought I would try them in my morning smoothie and guess what, they work great and are delicious!\u00a0 I used one of the very ripe round ones for my smoothie.\u00a0 Here&#8217;s how I made it . . .<\/p>\n<p><em><strong>Ingredients<\/strong><\/em><\/p>\n<p>1 very ripe persimmon<br \/>\n1\/2 to 1 cup kefir (mine&#8217;s homemade from local raw milk)<br \/>\n1 or 2 egg yolks (mine are from local backyard chickens)<br \/>\n1 tablespoon coconut oil (I use Tropical Traditions Gold Label)<br \/>\nStevia to taste<\/p>\n<p><em><strong>How to make the smoothie<\/strong><\/em><\/p>\n<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/10\/Persimmon-beaker.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-3932\" title=\"Persimmon &amp; beaker\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/10\/Persimmon-beaker-300x289.jpg\" alt=\"Persimmon &amp; beaker\" width=\"300\" height=\"289\" \/><\/a>Pour the kefir into a beaker (I use a heavy-duty borosilicate glass beaker); cut the persimmon in half and scoop out the flesh, add the coconut oil and stevia.\u00a0 Blend with a hand blender until well mixed.\u00a0 Add the egg yolks and blend briefly. This could be made in a regular blender as well.\u00a0 I don&#8217;t melt my coconut oil.\u00a0 I find that it blends very well without the extra step.<\/p>\n<p>Pour into a glass to serve (or just drink from the beaker as I often do).\u00a0 Persimmons make a very thick smoothie, much like a mango smoothie.\u00a0 In fact, it may require a spoon.
