{"id":4172,"date":"2012-12-21T16:25:27","date_gmt":"2012-12-21T22:25:27","guid":{"rendered":"http:\/\/realfoodhouston.com\/?p=4172"},"modified":"2018-10-25T12:41:53","modified_gmt":"2018-10-25T17:41:53","slug":"blueberry-muffins-grain-free","status":"publish","type":"post","link":"http:\/\/www.realfoodhouston.com\/wp-files\/2012\/12\/21\/blueberry-muffins-grain-free\/","title":{"rendered":"Blueberry Muffins &#8211; Grain Free"},"content":{"rendered":"<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/12\/Blueberry-muffins-grain-free.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-4174\" title=\"Blueberry muffins - grain-free\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/12\/Blueberry-muffins-grain-free-300x210.jpg\" alt=\"Blueberry muffins - grain-free\" width=\"300\" height=\"210\" \/><\/a>One of the projects for my <a href=\"http:\/\/nutritionaltherapy.com\/\" target=\"_blank\" rel=\"noopener\">Nutritional Therapy Practitioner<\/a> course was to make a real food recipe that I had never made before.\u00a0 I had not experimented much with grain-free baked foods so I chose to make a blueberry muffin recipe made with coconut flour.\u00a0 Many people are on gluten-free diets and are unable to eat foods made with wheat or other grains.\u00a0 Having an occasional alternative is important to staying free of gluten.\u00a0 I chose blueberry because I have always loved them, especially right out of the oven with lots of butter.\u00a0 I wanted to find out if coconut flour blueberry muffins would taste as good as wheat flour muffins.<\/p>\n<p>They did taste like I thought blueberry muffins should taste!\u00a0 They were delicious (especially with the extra butter)&#8211;warm, soft, and melt-in-your mouth good.\u00a0 Although I could tell there was coconut fiber in the muffins, that didn&#8217;t take anything away from the mouth feel, and there was <em>no<\/em> coconut taste.\u00a0 They also looked nice&#8211;exactly like blueberry muffins should look.\u00a0 I&#8217;ve <em>always<\/em> believed that food should look good as well as taste good. Appearance does matter!<\/p>\n<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/12\/Blueberry-muffin-with-butter.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-thumbnail wp-image-4175\" title=\"Blueberry muffin with butter\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2012\/12\/Blueberry-muffin-with-butter-150x150.jpg\" alt=\"Blueberry muffin with butter\" width=\"150\" height=\"150\" \/><\/a>Next time I want blueberry muffins, I will use this recipe&#8211;it&#8217;s great&#8211;although I would probably use less honey next time.\u00a0 Since we no longer eat much sweetener, I found this recipe just a bit <em>too<\/em> sweet.\u00a0\u00a0 I&#8217;d gotten my blueberries at my local farmers market earlier in the year and frozen them to use later. \u00a0 I didn&#8217;t thaw them, and they worked beautifully, as you can see.<\/p>\n<p><em>Here&#8217;s how I made my blueberry muffins:<\/em><\/p>\n<p><em><strong>Ingredients<\/strong><\/em><\/p>\n<p>3 eggs,<br \/>\n3 tablespoons butter, melted<br \/>\n3 tablespoons honey<br \/>\n\u00bc teaspoon salt<br \/>\n\u00bd teaspoon vanilla<br \/>\n\u00bc cup coconut flour<br \/>\n\u00bd cup blueberries<\/p>\n<p><em><strong>Preparation:<\/strong><\/em><\/p>\n<p>Blend together eggs, butter, honey, salt, and vanilla.\u00a0 Mix coconut flour into batter until there are no lumps.\u00a0 Fold blueberries into batter.\u00a0 Pour batter into baking cups.\u00a0 Bake at 400 degrees for 16-18 minutes.\u00a0 Makes 6 muffins.<\/p>\n<p>As they should, these muffins smell super good while baking!<\/p>\n<p>As always, I use the freshest and healthiest ingredients I can find.\u00a0 My eggs are from a local backyard farmer.\u00a0 The butter is Kerrygold from grassfed cows.\u00a0 The honey was unprocessed, though not local.\u00a0 The only salt I use is Celtic Sea Salt.\u00a0 The vanilla, coconut flour, and blueberries were organic.<\/p>\n<p><em>Note:\u00a0 Yes, that&#8217;s the way I&#8217;ve always put butter in my hot blueberry muffin!\u00a0 It&#8217;s easier to slice it that way.<\/em><\/p>\n<p><em>This recipe is shared on <a
