{"id":444,"date":"2011-07-03T06:07:02","date_gmt":"2011-07-03T00:07:02","guid":{"rendered":"http:\/\/realfoodhouston.com\/?p=444"},"modified":"2012-07-23T11:55:26","modified_gmt":"2012-07-23T16:55:26","slug":"how-to-ruin-deviled-eggs","status":"publish","type":"post","link":"http:\/\/www.realfoodhouston.com\/wp-files\/2011\/07\/03\/how-to-ruin-deviled-eggs\/","title":{"rendered":"How to Ruin Deviled Eggs"},"content":{"rendered":"<p>I couldn&#8217;t pass up commenting on a July 2, 2011, recipe by EatingWell editor Jessie Price.\u00a0\u00a0Her recipe for deviled eggs is found on <a href=\"http:\/\/shine.yahoo.com\/event\/fourthofjuly\/6-simple-secrets-for-perfect-velvety-deviled-eggs-2500901\" target=\"_blank\">Shine from Yahoo<\/a>. The problem\u00a0became\u00a0clear\u00a0in the second paragraph where she says, &#8220;Popular as these two-bite appetizers are, they\u2019re not typically healthy. Classic deviled-egg recipes are loaded with fat and calories.&#8221;\u00a0 Now, in my opinion, deviled eggs are wonderful, healthy, and very nutritious, besides being just plain delicious.\u00a0 Guess how\u00a0she\u00a0&#8220;improves&#8221;\u00a0her deviled eggs.\u00a0 For a recipe\u00a0using a\u00a0dozen eggs (makes 24 halves), to save fat and calories,\u00a0Ms. Price\u00a0<strong><em>throws away<\/em><\/strong> <em><strong>4 (8 halves)\u00a0of the egg yolks<\/strong><\/em>!!!\u00a0 Yes, she discards <strong><em>one third<\/em><\/strong> of the most nutritious part of the\u00a0eggs&#8211;the yolks&#8211;where most of the vitamins, especially the B vitamins are.\u00a0 As a substitute for the discarded yolks\u00a0(which she says no one will notice) she adds some nonfat cottage cheese.\u00a0 Now there&#8217;s nothing wrong with cottage cheese (but it&#8217;s certainly not more nutritious than egg yolk), <strong><em>if<\/em><\/strong> it were made with\u00a0whole unprocessed\u00a0milk, but that&#8217;s not what she used.\u00a0 She\u00a0used highly processed nonfat cottage cheese.\u00a0 Ms. Price also uses low-fat mayonnaise,\u00a0probably also a\u00a0highly processed product made with\u00a0still more\u00a0unhealthy substitutes\u00a0so that it feels and tastes like real food but\u00a0isn&#8217;t real food.\u00a0\u00a0 And they call these &#8220;EatingWell Deviled Eggs!&#8221;<\/p>\n<p>Isn&#8217;t this exactly\u00a0what most food processors do&#8211;substitute\u00a0highly processed, less nutritious\u00a0foods,\u00a0or even non-foods with unpronouncable names, for real foods?<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I couldn&#8217;t pass up commenting on a July 2, 2011, recipe by EatingWell editor Jessie Price.\u00a0\u00a0Her recipe for deviled eggs is found on Shine from Yahoo.
