When I saw a recipe for cornbread using coconut flour, I really doubted that it could be as good as my traditional recipe, but I thought I would give it a try.\u00a0\u00a0 Well, my version of this recipe turned out to be <em>just<\/em> what I was looking for&#8211;it had the familiar taste and texture I loved and had only a few grams of carbohydrates per piece.\u00a0 Although this is not a grain-free recipe, it has far less grain than traditional cornbread.\u00a0 To further lower the carb count, I also used only one tablespoon of honey and added a few drops of stevia.\u00a0 Here&#8217;s how I made my Coconut Flour Cornbread:<\/p>\n<p><em><strong>Ingredients<\/strong><\/em><\/p>\n<p>6 eggs, preferably from pastured chickens<br \/>\n1\/3 cup butter, melted, from grass-fed cows<br \/>\n1 tablespoon honey<br \/>\n4 drops liquid stevia<br \/>\n\u00bd teaspoon organic vanilla<br \/>\n\u00bd teaspoon unrefined sea salt<br \/>\n\u00bc cup sifted organic coconut flour<br \/>\n\u00bd teaspoon baking powder (aluminum free)<br \/>\n1\/3 cup cornmeal (sprouted corn flour)<\/p>\n<p><em><strong>Preparation<\/strong><\/em><\/p>\n<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/04\/Corn-bread.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-4487\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/04\/Corn-bread-300x240.jpg\" alt=\"Cornbread\" width=\"300\" height=\"240\" \/><\/a>Blend together eggs, butter, honey, stevia, vanilla, and salt.\u00a0 Combine coconut flour, baking powder, and cornmeal and whisk into batter until there are no lumps.\u00a0 Fill buttered 8x8x2 inch baking dish.\u00a0 Bake at 400 degrees F for 15-18 minutes.\u00a0 Makes 9 servings.<\/p>\n<p>There are approximately 5 net grams of carbohydrates per serving.<\/p>\n<p>This cornbread is extra good with soups and stews like <a href=\"http:\/\/realfoodhouston.com\/2011\/08\/07\/southwestern-beef-stew\/\">Southwestern Stew<\/a> and <a href=\"http:\/\/realfoodhouston.com\/2011\/07\/10\/vegetable-beef-soup\/\">Vegetable Beef Soup<\/a>.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Having been born and always lived in the South, cornbread is one of my favorite foods, especially served hot with lots of butter melted inside.\u00a0 I&#8217;ve posted a recipe for traditional Southern Cornbread before;
