{"id":471,"date":"2011-07-10T16:42:58","date_gmt":"2011-07-10T21:42:58","guid":{"rendered":"http:\/\/realfoodhouston.com\/?p=471"},"modified":"2018-10-25T13:20:44","modified_gmt":"2018-10-25T18:20:44","slug":"vegetable-beef-soup","status":"publish","type":"post","link":"http:\/\/www.realfoodhouston.com\/wp-files\/2011\/07\/10\/vegetable-beef-soup\/","title":{"rendered":"Vegetable Beef Soup"},"content":{"rendered":"<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2011\/07\/Veb_beef_soup_pot.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-476\" title=\"Veb_beef_soup_pot\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2011\/07\/Veb_beef_soup_pot-300x223.jpg\" alt=\"\" width=\"300\" height=\"223\" \/><\/a>I&#8217;ve been making vegetable beef soup for many years, but after reading <em>Nourishing Traditions <\/em>and <em>Eat Fat, Lose Fat<\/em>, both\u00a0by Sally Fallon and Dr. Mary Enig, I&#8217;ve added\u00a0an important new step to increase the nutrition and enhance the flavor.\u00a0 I now soak the bones in vinegar and\u00a0filtered water before cooking.<\/p>\n<p>Here&#8217;s how I make it now (my sources are in parentheses):<\/p>\n<p>2-3 pounds meaty beef soup bones (Law Family Ranch)<br \/>\n1 organic onion, chopped<br \/>\n2 quarts filtered water (fluoride free)<br \/>\n1 large can whole tomatoes, cut up (Muir Glen)<br \/>\n1\/2 cup vinegar (Bragg&#8217;s raw apple cider vinegar)<br \/>\n1 teaspoon dried organic thyme (Frontier)<br \/>\n1\/2 cup red wine (organic grapes)<br \/>\n1 teaspoon salt, or to taste\u00a0(Celtic Sea Salt)<br \/>\norganic black pepper, to taste<br \/>\n4 cups chopped organic vegetables, such as carrots, celery, potatoes, green pepper, green beans<br \/>\n1\/2 cup whole grain organic noodles, broken (Jovial einkorn wheat noodles)<br \/>\n2 cups prepared organic beans (or 1 can organic beans), optional (Westbrae)<\/p>\n<p>Brown soup bones in 400 degree F. oven for 45 &#8211;
