{"id":5064,"date":"2013-12-16T16:40:05","date_gmt":"2013-12-16T22:40:05","guid":{"rendered":"http:\/\/realfoodhouston.com\/?p=5064"},"modified":"2016-06-03T13:38:31","modified_gmt":"2016-06-03T18:38:31","slug":"roast-goose-for-thanksgiving-dinner","status":"publish","type":"post","link":"http:\/\/www.realfoodhouston.com\/wp-files\/2013\/12\/16\/roast-goose-for-thanksgiving-dinner\/","title":{"rendered":"Roast Goose for Thanksgiving Dinner"},"content":{"rendered":"<p>My family doesn&#8217;t especially like the white meat in chicken or turkey.\u00a0 That&#8217;s why we usually prefer goose or duck because the meat is all dark meat&#8211;tender and full of flavor.\u00a0 Last year&#8217;s <a href=\"http:\/\/realfoodhouston.com\/2012\/12\/25\/whats-for-christmas-dinner-roast-duckling-and-veggies\/\">Christmas dinner<\/a> featured roast duckling.\u00a0 Modern turkeys are bred for a super large breast so the proportion of white meat to dark meat is not normal.\u00a0 To have more of the juicy dark meat that we like, we opted out of turkey for our <a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Roast-Goose.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-5066\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Roast-Goose-300x216.jpg\" alt=\"Roast Goose\" width=\"300\" height=\"216\" \/><\/a>Thanksgiving dinner this year.\u00a0 There&#8217;s another great reason to have goose or duck for special dinners&#8211;the leftover fat can be saved and is perfect for <a href=\"http:\/\/realfoodhouston.com\/2013\/01\/05\/grass-fed-beef-tostadas-with-guacamole\/\">cooking and frying<\/a>.<\/p>\n<p>For our Thanksgiving dinner, we had roast goose, a healthier version of the classic green bean casserole, broccoli, mixed squash with onion and butter, fermented cranberry-orange relish, and sprouted flour cornbread.<\/p>\n<p>I roasted the goose in an covered enameled roasting pan at 250 degrees F. for about four hours.\u00a0 It was oh so tender but also nicely browned.<\/p>\n<p>My daughter brought her version of <a href=\"http:\/\/nourishingjoy.com\/real-food-green-bean-casserole\/\" target=\"_blank\">Real Food Green Bean Casserole.<\/a><\/p>\n<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Thanksgiving-dinner-2013.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-thumbnail wp-image-5067\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Thanksgiving-dinner-2013-150x150.jpg\" alt=\"Thanksgiving Dinner 2013\" width=\"150\" height=\"150\" \/><\/a>The broccoli, squash, and green beans were from all from our <a href=\"http:\/\/www.ermasnutritioncenter.com\/retailer\/store_templates\/am_custom_page.asp?PageID=1348&amp;storeID=14266C65F09F4E5C89990CB4ADD1FCE4\" target=\"_blank\">local farmers market<\/a>.<\/p>\n<p>The cranberry orange relish was my version of the <a href=\"http:\/\/kellythekitchenkop.com\/2010\/03\/fermented-cranberry-relish-real-food-wednesday.html\" target=\"_blank\">recipe from Kelly the Kitchen Kop<\/a>.<\/p>\n<p>The cornbread is made with sprouted flour and is sooo good that I just had to feature it with its own post &#8211;
