{"id":5070,"date":"2013-12-16T16:41:18","date_gmt":"2013-12-16T22:41:18","guid":{"rendered":"http:\/\/realfoodhouston.com\/?p=5070"},"modified":"2018-07-22T21:03:08","modified_gmt":"2018-07-23T02:03:08","slug":"cornbread-gluten-free-made-with-sprouted-corn-flour","status":"publish","type":"post","link":"http:\/\/www.realfoodhouston.com\/wp-files\/2013\/12\/16\/cornbread-gluten-free-made-with-sprouted-corn-flour\/","title":{"rendered":"Cornbread &#8211; Gluten-Free, Made with Sprouted Corn Flour"},"content":{"rendered":"<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Cornbread-sprouted-flour.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-5133\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Cornbread-sprouted-flour-300x300.jpg\" alt=\"Sprouted Flour Cornbread\" width=\"300\" height=\"300\" srcset=\"http:\/\/www.realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Cornbread-sprouted-flour-300x300.jpg 300w, http:\/\/www.realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Cornbread-sprouted-flour-150x150.jpg 150w, http:\/\/www.realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Cornbread-sprouted-flour.jpg 768w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>Traditionally, the bread at many Southern meals has been cornbread, especially if those meals included pork, beans, or greens.\u00a0 I&#8217;ve always loved homemade cornbread and have tried different recipes, but this is my favorite.<\/p>\n<p>The kind of cornbread I grew up with was made with only cornmeal, no wheat at all, and did not have any added sweetener.\u00a0 My mom made her cornbread in a cast iron skillet on the stovetop.\u00a0 She turned it over to finish cooking and brown the top.\u00a0 Her cornmeal was a typical commercial version of degerminated cornmeal.<\/p>\n<p>I&#8217;ve developed a recipe that is very, very close to the cornbread I remember growing up, and, at the same time, it is made with a healthier more nutritious cornmeal&#8211;sprouted whole corn flour!\u00a0 We all love the taste and texture of this cornbread and I&#8217;ve already made it several times, including for Thanksgiving dinner.\u00a0 I plan to make a batch of this cornbread to use in dressing for our Christmas dinner.<\/p>\n<p>This is a great addition to almost any meal.\u00a0 It&#8217;s quick to fix and bake and doesn&#8217;t require very many ingredients.\u00a0 The corn flour is more economical if bought in larger quantities.\u00a0 It can be stored for several months in the freezer.\u00a0 I keep a smaller amount in the refrigerator for regular use.<br \/>\n<code>\u00a0<\/code><\/p>\n<h2>Sprouted Flour Cornbread<\/h2>\n<p><em><strong>Ingredients<\/strong><\/em><\/p>\n<p>2 cups sprouted corn flour (I used 2lb. Organic, <a href=\"http:\/\/www.amazon.com\/gp\/product\/B004GP4ZMY\/ref=as_li_tf_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B004GP4ZMY&amp;linkCode=as2&amp;tag=reafoohou-20\">To Your Health Sprouted Yellow Corn Flour<\/a><img loading=\"lazy\" decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" src=\"http:\/\/ir-na.amazon-adsystem.com\/e\/ir?t=reafoohou-20&amp;l=as2&amp;o=1&amp;a=B004GP4ZMY\" alt=\"\" width=\"1\" height=\"1\" border=\"0\" \/><br \/>\n1\/2 teaspoon salt (I use Celtic Sea Salt<img loading=\"lazy\" decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" src=\"http:\/\/ir-na.amazon-adsystem.com\/e\/ir?t=reafoohou-20&amp;l=as2&amp;o=1&amp;a=B009NT3JD4\" alt=\"\" width=\"1\" height=\"1\" border=\"0\" \/>)<br \/>\n2 teaspoons aluminum-free baking powder (I use Rumford Baking Powder<img loading=\"lazy\" decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" src=\"http:\/\/ir-na.amazon-adsystem.com\/e\/ir?t=reafoohou-20&amp;l=as2&amp;o=1&amp;a=B0001M10OW\" alt=\"\" width=\"1\" height=\"1\" border=\"0\" \/>)<br \/>\n4 tablespoons melted butter (I use Kerrygold)<br \/>\n2 eggs, preferably from pastured chickens (I use eggs from a local backyard farmer)<br \/>\n1 cup milk (I use raw whole milk from <a href=\"https:\/\/www.facebook.com\/healthyway.dairy?fref=ts\" target=\"_blank\" rel=\"noopener\">Healthyway Dairy<\/a>)<\/p>\n<p><em><strong>Preparation<\/strong><\/em><\/p>\n<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Sprouted-WW-Flour-Cornbread.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-5281\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Sprouted-WW-Flour-Cornbread-300x243.jpg\" alt=\"Sprouted Flour Cornbread\" width=\"300\" height=\"243\" srcset=\"http:\/\/www.realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Sprouted-WW-Flour-Cornbread-300x243.jpg 300w, http:\/\/www.realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Sprouted-WW-Flour-Cornbread.jpg 947w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>Preheat oven to 400 degrees F.\u00a0 Combine dry ingredients in a bowl.\u00a0 Combine liquid ingredients and add to dry ingredients.\u00a0 Stir just until combined.\u00a0 Pour into a buttered 8-inch square pan.\u00a0 Bake about 20 minutes until lightly browned.<\/p>\n<p>Cut into about 9 squares and serve hot with lots of extra butter.<\/p>\n<p>We had this version of cornbread with our <a href=\"http:\/\/realfoodhouston.com\/2013\/12\/16\/roast-goose-for-thanksgiving-dinner\/\">Thanksgiving dinner<\/a>.<\/p>\n<p><em>Variations:<\/em><\/p>\n<p>Dairy-free:\u00a0 Substitute melted coconut oil or lard for the butter and coconut milk for dairy milk.<br \/>\nButtermilk:\u00a0 Substitute 1 cup buttermilk, yogurt, or kefir for whole milk and add 1\/2 teaspoon baking soda.<\/p>\n<p><em>For more delicious versions of cornbread, see <a href=\"http:\/\/realfoodhouston.com\/2013\/04\/10\/coconut-flour-cornbread\/\" target=\"_blank\" rel=\"noopener\">Coconut Flour Cornbread,<\/a> which uses much less corn flour, and <a href=\"http:\/\/realfoodhouston.com\/2011\/09\/30\/southern-cornbread\/\">Southern Cornbread<\/a> made with freshly ground corn and whole wheat and baked in a cast iron skillet.<\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Traditionally, the bread at many Southern meals has been cornbread, especially if those meals included pork, beans, or greens.\u00a0 I&#8217;ve always loved homemade cornbread and have tried different recipes, but this is my favorite.
