my son said!\u00a0 He always likes the food I cook, but he said this Christmas dinner was maybe the best meal I&#8217;d ever prepared.\u00a0 Maybe he was just extra hungry, but he wasn&#8217;t the only one that enjoyed the dinner.\u00a0 We all thought it was delicious, AND, it was all Real Food.<\/p>\n<p>Christmas dinner this year was <a href=\"http:\/\/realfoodhouston.com\/2012\/05\/26\/whats-for-dinner-thyme-roasted-chicken-green-beans-mashed-potatoes-and-cranberry-apple-chutney\/\">thyme roasted chicken,<\/a> baked nitrite-free ham, <a title=\"Cornbread Dressing (or Stuffing) \u2013 Gluten-free\" href=\"http:\/\/realfoodhouston.com\/2013\/12\/30\/cornbread-dressing-or-stuffing-gluten-free\/\">cornbread dressing<\/a>, <a title=\"Homemade Cream Gravy \u2013 you don\u2019t need to avoid gravy!\" href=\"http:\/\/realfoodhouston.com\/2014\/01\/06\/homemade-cream-gravy-you-dont-need-to-avoid-gravy\/\">cream gravy<\/a>, and lots of fresh veggies, followed by <a title=\"Gingerbread with Cream Cheese and Raw Honey Topping\" href=\"http:\/\/realfoodhouston.com\/2014\/01\/07\/gingerbread-with-cream-cheese-and-raw-honey-topping\/\">gingerbread<\/a> with cream cheese topping.<\/p>\n<p>Oh how good real food tastes!<\/p>\n<p>To save cooking time on Christmas day, I made two of the dishes the day before&#8211;the cornbread dressing (ready to put in the oven) and the gingerbread.<\/p>\n<p>Preparation:<\/p>\n<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Thyme-roasted-chicken-with-potatoes.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-5191\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Thyme-roasted-chicken-with-potatoes-300x218.jpg\" alt=\"sThyme-roasted chicken with potatoes\" width=\"243\" height=\"176\" \/><\/a><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Cornbread-dressing.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-thumbnail wp-image-5189\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Cornbread-dressing-150x150.jpg\" alt=\"Cornbread dressing\" width=\"150\" height=\"150\" \/><\/a>First thing Christmas day, the chicken went into the oven with organic golden potatoes surrounding it in the baking pan.\u00a0 When the chicken was an hour from being done, I put the cornbread dressing in the oven.\u00a0 The recipe for the dressing, made with gluten-free sprouted corn flour, is in a separate post.<\/p>\n<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Cabbage.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-thumbnail wp-image-5177\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Cabbage-150x150.jpg\" alt=\"Head of cabbage\" width=\"150\" height=\"150\" \/><\/a>While the dressing and chicken were cooking, we prepared the veggies.<\/p>\n<p>I washed the cabbage&#8211;fresh and tender from the Nassau Bay Farmers Market&#8211;and shredded it with a knife.\u00a0 By the way, when cooking fresh, local cabbage, use the whole head and don&#8217;t throw away the lovely, dark-green outer leaves.\u00a0 Those leaves are full of nutrition and flavor.\u00a0 About 20 minutes before the chicken and dressing were done, I cooked the shredded cabbage in a skillet with lots of butter, probably at least 3 to 4 tablespoons.\u00a0 We love butter.\u00a0 I seasoned the cabbage with a little sea salt (I use Celtic Sea Salt) and freshly ground black pepper.<\/p>\n<p>The broccoli, also from a local farmer at the <a href=\"https:\/\/www.facebook.com\/pages\/Nassau-Bay-Farmers-Market\/217094481767170\" target=\"_blank\">Nassau Bay Farmers Market<\/a>, was washed and separated into flowerets.\u00a0 The stem was peeled and sliced and added to the pot.\u00a0 The broccoli was cooked about 5 minutes in simmering filtered water, then drained and seasoned with butter and sea salt.<\/p>\n<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Mixed-squash-and-onion.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-5179\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Mixed-squash-and-onion-300x236.jpg\" alt=\"Mixed squash and onion\" width=\"194\" height=\"153\" \/><\/a>The squash&#8211;mixed pattypan, zucchini, and yellow squash&#8211;were washed and cut into chunks.\u00a0 Two chopped onions were added to the pot.\u00a0 Only the pattypan, the last of the season, was from the farmers market.\u00a0 The zucchini and yellow squash were organic but not local.\u00a0 The squash were simmered in filtered water about 10 minutes, then well-drained and seasoned with lots of butter and sea salt.<\/p>\n<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Baked-ham.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright wp-image-5175\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Baked-ham-300x199.jpg\" alt=\"Baked ham\" width=\"194\" height=\"129\" srcset=\"http:\/\/www.realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Baked-ham-300x199.jpg 300w, http:\/\/www.realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Baked-ham-1024x680.jpg 1024w, http:\/\/www.realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Baked-ham-1080x717.jpg 1080w, http:\/\/www.realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Baked-ham.jpg 1157w\" sizes=\"auto, (max-width: 194px) 100vw, 194px\" \/><\/a>Since the ham was precooked, we just heated some slices for a few minutes in our toaster oven.\u00a0 Our one big oven was full of chicken and dressing.<\/p>\n<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Cream-gravy.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-thumbnail wp-image-5196\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Cream-gravy-150x150.jpg\" alt=\"Cream Gravy\" width=\"150\" height=\"150\" \/><\/a>To go with the meat, dressing, and veggies, I made a <a href=\"http:\/\/realfoodhouston.com\/2014\/01\/06\/homemade-cream-gravy-you-dont-need-to-avoid-gravy\/\">cream gravy<\/a> with goose fat, einkorn flour, raw cream, and homemade broth.\u00a0 The gravy is also featured in a separate post.<\/p>\n<p>The fermented cranberry-orange relish was made for our <a href=\"http:\/\/realfoodhouston.com\/2013\/12\/16\/roast-goose-for-thanksgiving-dinner\/\">Thanksgiving dinner<\/a> and was still tangy and delicious.<\/p>\n<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Gingerbread-with-cream-cheese-topping.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-thumbnail wp-image-5194\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2013\/12\/Gingerbread-with-cream-cheese-topping-150x150.jpg\" alt=\"Gingerbread with cream cheese topping\" width=\"150\" height=\"150\" \/><\/a>As a finish to our holiday meal, we had <a title=\"Gingerbread with Cream Cheese and Raw Honey Topping\" href=\"http:\/\/realfoodhouston.com\/2014\/01\/07\/gingerbread-with-cream-cheese-and-raw-honey-topping\/\">real gingerbread<\/a> with a cream cheese and raw honey topping.<\/p>\n<p><em>Note:\u00a0 I
