{"id":5434,"date":"2014-03-16T20:53:22","date_gmt":"2014-03-17T01:53:22","guid":{"rendered":"http:\/\/realfoodhouston.com\/?p=5434"},"modified":"2016-01-11T14:25:42","modified_gmt":"2016-01-11T20:25:42","slug":"blackberry-cobbler-with-crumb-topping","status":"publish","type":"post","link":"http:\/\/www.realfoodhouston.com\/wp-files\/2014\/03\/16\/blackberry-cobbler-with-crumb-topping\/","title":{"rendered":"Blackberry Cobbler with Crumb Topping"},"content":{"rendered":"<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/03\/Blackberry-Cobbler.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-large wp-image-5448\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/03\/Blackberry-Cobbler-1024x933.jpg\" alt=\"Blackberry Cobbler with Crumb Topping\" width=\"640\" height=\"583\" \/><\/a>I found some really fresh, beautiful organic blackberries last week and immediately thought of a fruit pie.\u00a0 What&#8217;s the easiest, quickest way to have fruit pie?\u00a0 It&#8217;s a cobbler, and the quickest topping is a crumb topping.<\/p>\n<p>After some online research into crumb toppings, I decided to upgrade the standard and create my own healthier version.<\/p>\n<p>To start, I reduced the total amount of sugar and also substituted unrefined organic sucanat for the usual processed white sugar.\u00a0 I added a little maple syrup for flavor. then to avoid the necessity of soaking or fermenting, I used high extraction Einkorn flour rather than white all-purpose.\u00a0 As always, I used organic ingredients to avoid the poisons sprayed on conventional foods.<\/p>\n<p>I took some photos in case it turned out all right. Well, it was super and quite sweet enough for dessert. I&#8217;m glad I had those photos so I could share the recipe with you. I will certainly be making this again, maybe with local blueberries when they&#8217;re in season.<\/p>\n<h2>Blackberry Cobbler with Crumb Topping<\/h2>\n<h3><strong><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/03\/Serving-of-cobbler.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-5437\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/03\/Serving-of-cobbler-300x267.jpg\" alt=\"Bowl of blackberry cobbler\" width=\"300\" height=\"267\" \/><\/a>Ingredients<\/strong><\/h3>\n<p><em><strong>Fruit Filling<\/strong><\/em><\/p>\n<p>4 cups organic blackberries<br \/>\n1\/4 cup organic sucanat (I used Rapunzel)<br \/>\n1 tablespoon organic Einkorn flour (I used Jovial)<br \/>\n1 tablespoon organic maple syrup (I used Shady Maple)<br \/>\n1 tablespoon fresh organic lemon juice<\/p>\n<p><em><strong>Crumb Topping<\/strong><\/em><\/p>\n<p>1\/2 cup organic Einkorn flour (I used Jovial)<br \/>\n1\/4 cup Organic sucanat (I used Rapunzel)<br \/>\n1\/4 cup butter (I used Kerrygold)<br \/>\ndash of cinnamon (I used Frontier organic)<br \/>\ndash of nutmeg (I used Frontier organic)<\/p>\n<h3><strong>Preparation<\/strong><\/h3>\n<p>Preheat oven to 350 degrees.<\/p>\n<p>Mix filling ingredients together and put into a baking dish.<\/p>\n<p>Combine flour, sucanat, cinnamon, and nutmeg. Cut in butter&#8211;I use a pastry blender&#8211;until well combined. Sprinkle the crumb topping over fruit mixture.<\/p>\n<p>Bake about 40 minutes or until the filling is bubbly and the topping is slightly browned.<\/p>\n<p>This cobbler was very good slightly warm and even better cold the next day.
