{"id":5613,"date":"2014-04-20T16:10:31","date_gmt":"2014-04-20T21:10:31","guid":{"rendered":"http:\/\/realfoodhouston.com\/?p=5613"},"modified":"2016-04-28T19:53:54","modified_gmt":"2016-04-29T00:53:54","slug":"nutty-granola-grain-free-paleo-and-raw","status":"publish","type":"post","link":"http:\/\/www.realfoodhouston.com\/wp-files\/2014\/04\/20\/nutty-granola-grain-free-paleo-and-raw\/","title":{"rendered":"Nutty Granola &#8211; Grain-free, Paleo and Raw"},"content":{"rendered":"<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/04\/Paleo-Granola-with-Blueberries.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-5614 aligncenter\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/04\/Paleo-Granola-with-Blueberries-1024x882.jpg\" alt=\"Paleo Granola with Blueberries\" width=\"640\" height=\"551\" \/><\/a>I have always loved granola!\u00a0 It&#8217;s crunchy, fruity, and delicious.\u00a0 However, the recipe I made many, many years ago had lots of oats, unsoaked nuts &amp; seeds and processed vegetable oil.\u00a0 So, I stopped eating granola.\u00a0 Anyway, It isn&#8217;t as nutrient dense as my <a href=\"http:\/\/realfoodhouston.com\/?s=smoothie\">smoothies<\/a> or eggs &amp; bacon.\u00a0 But I have to admit I did miss my granola, even though I have NOT missed eating <a href=\"http:\/\/www.westonaprice.org\/modern-foods\/dirty-secrets-of-the-food-processing-industry?qh=YTo5OntpOjA7czo1OiJkaXJ0eSI7aToxO3M6Nzoic2VjcmV0cyI7aToyO3M6Njoic2VjcmV0IjtpOjM7czo5OiJzZWNyZXRpb24iO2k6NDtzOjc6InNlY3JldGUiO2k6NTtzOjg6InNlY3JldGVkIjtpOjY7czo4OiJzZWNyZXRlcyI7aTo3O3M6OToic2VjcmV0aW5nIjtpOjg7czoxMDoic2VjcmV0aW9ucyI7fQ%3D%3D\" target=\"_blank\">unhealthy<\/a> boxed cold cereals.<\/p>\n<p>Oats, the common mainstay of granola, need to be soaked and cooked to make them more digestible.\u00a0 Read more <a href=\"http:\/\/www.thehealthyhomeeconomist.com\/no-granola-is-good-granola\/\" target=\"_blank\">here<\/a> about why toasted oats in granola are not good for you.\u00a0 Although some people have had success making granola from soaked and cooked oats, most say it doesn&#8217;t make the crunchy granola that I like.\u00a0 It&#8217;s more chewy.<\/p>\n<p>I found several versions of grain-free granola and decided to try making my own.\u00a0 I took some ideas from each, used soaked and dehydrated nuts and seeds, and other safe, healthy ingredients to make my own granola. I wanted all the nuts and seeds to be soaked and dehydrated and everything to remain raw but digestible.\u00a0\u00a0 This recipe makes granola just the way I like it.\u00a0 It adds variety and satisfaction that I had been missing in my diet.\u00a0 I am so glad I can enjoy my homemade granola again!<\/p>\n<p>Here&#8217;s how I made my healthier version of granola:<\/p>\n<h2>Nutty Granola &#8211; Grain-free, Paleo and Raw<\/h2>\n<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/04\/Paleo-granola.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-5620\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/04\/Paleo-granola-221x300.jpg\" alt=\"Bowl of nutty granola\" width=\"221\" height=\"300\" srcset=\"http:\/\/www.realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/04\/Paleo-granola-221x300.jpg 221w, http:\/\/www.realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/04\/Paleo-granola-755x1024.jpg 755w, http:\/\/www.realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/04\/Paleo-granola.jpg 768w\" sizes=\"auto, (max-width: 221px) 100vw, 221px\" \/><\/a><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>2 cups almonds, soaked and dehydrated<br \/>\n2 cups raw walnuts, soaked and dehydrated<br \/>\n2 cups raw cashews, soaked and dehydrated<br \/>\n2 cups, raw pecans, soaked and dehydrated<br \/>\n1 cup raw pumpkin seeds, soaked and dehydrated<br \/>\n1 cup sunflower seeds, soaked and dehydrated<br \/>\n1 cup dehydrated mango chunks (I use Wilderness Family Naturals)<br \/>\n1 cup coconut chips (I use Wilderness Family Naturals)<br \/>\n2 cups organic raisins (I use <a href=\"http:\/\/www.woodstock-foods.com\/Pages\/default.aspx\" target=\"_blank\">Woodstock<\/a>)<br \/>\n1\/4 cup coconut oil (I use <a href=\"http:\/\/www.tropicaltraditions.com\/\" target=\"_blank\">Tropical Traditions<\/a> Gold Label)<br \/>\n1\/2 cup raw honey, preferably local (I use Gulf Coast Honey Bee Farms)<br \/>\n1 tablespoon organic vanilla<br \/>\n1 tablespoon Ceylon cinnamon (I use <a href=\"http:\/\/www.frontiercoop.com\/\" target=\"_blank\">Frontier<\/a> organic)<br \/>\n1 teaspoon sea salt (I use <a href=\"http:\/\/www.celticseasalt.com\/\" target=\"_blank\">Celtic Sea Salt<\/a>)<\/p>\n<p><strong>Preparation<\/strong><\/p>\n<p>Since I do not have a dehydrator, I buy my nuts and seeds already soaked and dehydrated. I have bought nuts and seeds from both <a href=\"http:\/\/www.wildernessfamilynaturals.com\/\" target=\"_blank\">Wilderness Family Naturals<\/a> and <a href=\"http:\/\/www.radiantlifecatalog.com\/\" target=\"_blank\">Radiant Life<\/a> but most of those used in this recipe are from Wilderness Family Naturals.\u00a0 If you have a dehydrator, <a href=\"http:\/\/www.thehealthyhomeeconomist.com\/video-raw-nuts-done-right\/\" target=\"_blank\">here&#8217;s<\/a> a video about how to soak and dehydrate your own raw nuts and seeds.<\/p>\n<p>Combine the coconut oil, honey, vanilla, cinnamon and sea salt in a saucepan over <em>very<\/em> low heat until melted and well mixed. To preserve the enzymes in the honey, it is important that the heat is never hotter than your fingers can safely touch. Coconut oil melts at about 76 degrees Fahrenheit, so the mixture should be easy to mix well before it is too hot to touch.<\/p>\n<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/04\/Whacking-nuts.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-5702\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/04\/Whacking-nuts-300x225.jpg\" alt=\"Chopping nuts\" width=\"300\" height=\"225\" srcset=\"http:\/\/www.realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/04\/Whacking-nuts-300x225.jpg 300w, http:\/\/www.realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/04\/Whacking-nuts.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>Meanwhile chop nuts. You can use a food processor or a blender, but I found that the easiest and for me the best way is to put the nuts, one kind at a time, in a gallon Ziploc bag and pound with a wooden rolling-pin. This method results in the most evenly broken up pieces. Both the food processor and blender seemed to turn a lot of the nuts into dust before all the pieces are broken up.<\/p>\n<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/04\/Mixing-bowl-of-granola.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-5618\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/04\/Mixing-bowl-of-granola-300x250.jpg\" alt=\"Mixing bowl of granola\" width=\"300\" height=\"250\" \/><\/a>Put all the nuts and seeds in a large bowl. Pour the coconut oil mixture over the nuts and seeds and stir well. I add the coconut oil mixture a little at a time to help distribute it evenly. When well combined, add the mango chunks, coconut chips, and raisins.<\/p>\n<p>Store in airtight glass containers in the refrigerator. I use half-gallon or quart mason jars.<\/p>\n<p>This recipe makes about 4 quarts of grain-free granola.<\/p>\n<p>My favorite way to eat this granola is in a bowl with organic blueberries and raw cream or milk. Oooom good!
