{"id":5824,"date":"2014-07-14T12:36:06","date_gmt":"2014-07-14T17:36:06","guid":{"rendered":"http:\/\/realfoodhouston.com\/?p=5824"},"modified":"2015-11-06T13:59:50","modified_gmt":"2015-11-06T19:59:50","slug":"blueberry-banana-nut-bread","status":"publish","type":"post","link":"http:\/\/www.realfoodhouston.com\/wp-files\/2014\/07\/14\/blueberry-banana-nut-bread\/","title":{"rendered":"Blueberry Banana Nut Bread"},"content":{"rendered":"<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/07\/Blueberry-Banana-Nut-Bread-Cooling.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-large wp-image-5825\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/07\/Blueberry-Banana-Nut-Bread-Cooling-1024x768.jpg\" alt=\"Blueberry Banana Nut Bread\" width=\"640\" height=\"480\" srcset=\"http:\/\/www.realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/07\/Blueberry-Banana-Nut-Bread-Cooling.jpg 1024w, http:\/\/www.realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/07\/Blueberry-Banana-Nut-Bread-Cooling-300x225.jpg 300w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a>Here in Houston, blueberries are in season, and I love blueberries!\u00a0 They have always been my favorite berry and one of my overall favorite fruits.\u00a0 I eat them with my homemade <a href=\"http:\/\/realfoodhouston.com\/2014\/04\/20\/nutty-granola-grain-free-paleo-and-raw\/\">Nutty Granola<\/a> and raw milk, in smoothies, in homemade ice cream, and now also in banana nut bread.\u00a0 I found these blueberries at my local farmers market.<\/p>\n<p>Somehow the combination of moist banana and blueberries produced a bread even more delicious than when using either one by itself.\u00a0 An even bigger plus is that <a href=\"http:\/\/foodfacts.mercola.com\/blueberries.html\" target=\"_blank\">blueberries<\/a> are very nutritious and pack a lot of health benefits.\u00a0 <a href=\"http:\/\/foodfacts.mercola.com\/banana.html\" target=\"_blank\">Bananas<\/a> are good for you too!<\/p>\n<p>Here&#8217;s how I made my blueberry banana nut bread:<\/p>\n<h3>Ingredients<\/h3>\n<p>2 \u00bd\u00a0 cups organic flour (I used Jovial Einkorn high extraction flour so that I would not need to soak the flour)<br \/>\n2\/3 cup organic sucanat or other unrefined sweetener (I used Rapunzel whole sugar)<br \/>\n3 \u00bd teaspoons baking powder (I used Rumford aluminum-free baking powder)<br \/>\n1 teaspoon unrefined sea salt (I used Celtic Sea Salt<br \/>\n3 tablespoons oil (I used Olea olive oil, but coconut oil would work well too)<br \/>\n1\/3 cup milk (I used local raw whole milk)<br \/>\n1 egg, preferably from pastured chickens<br \/>\n1 \u00bc cups mashed organic banana (about 2 to 3 medium)<br \/>\n1 cup organic blueberries (I used fresh local, but frozen would work too)<br \/>\n1 cup chopped nuts (I used chopped soaked and dehydrated pecans)<\/p>\n<h3>Preparation<\/h3>\n<p>Heat oven to 350 degrees Fahrenheit.<br \/>\nButter bottom only of loaf pan (I used a glass Pyrex 9 x 5&#8243; loaf pan).<br \/>\nMix all ingredients except fruits and nuts.
