Can the NuVal nutrition score help us find healthy foods?"},"content":{"rendered":"<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/09\/Liver-with-onions.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-6066\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/09\/Liver-with-onions-300x241.jpg\" alt=\"Liver with onions\" width=\"300\" height=\"241\" \/><\/a>Wouldn&#8217;t it be great if we could glance at a food on the grocery shelves and know how nutritious it was?\u00a0 We could then spend our food budget on those foods that would give us the most benefit.\u00a0 There is a new system that claims to help us do just that, but does it?<\/p>\n<p>Recently <a href=\"https:\/\/twitter.com\/NuValTexas\" target=\"_blank\">@NuValTexas<\/a> followed <a href=\"https:\/\/twitter.com\/RealFoodHouston\" target=\"_blank\">@RealFoodHouston<\/a> on Twitter.\u00a0 I hadn&#8217;t heard of NuVal before, but I was curious because their Twitter site claimed it was &#8220;dedicated to building a better #Texas.&#8221;\u00a0 When someone new follows you don&#8217;t you look to see who they are and what they are saying?<\/p>\n<p>NuVal, which calls itself Easy Texas Nutrition on Twitter, says &#8220;With NuVal nutrition scores, you can quickly, easily compare brands as you shop and buy better nutrition choices.&#8221;\u00a0 Sounds great, doesn&#8217;t it!\u00a0 We all know that most people need help determining which foods are more nutritious to get better value for their food dollar.<\/p>\n<p>I wanted to know If NuVal delivers on its promise.<\/p>\n<p>According to NuVal&#8217;s <a href=\"http:\/\/www.nuval.com\/how\" target=\"_blank\">website<\/a>, their system &#8220;scores food on a scale of 1-100. The higher the NuVal Score, the better the nutrition.&#8221;\u00a0 They use a &#8220;sophisticated scientific algorithm&#8221; to calculate the socres. [<a href=\"http:\/\/www.nuval.com\/how\" target=\"_blank\">source<\/a>]<\/p>\n<p>Sounds like a great idea, doesn&#8217;t it!\u00a0 How convenient!\u00a0 How helpful!\u00a0 They plan to have the NuVal nutrition score posted on grocery store shelves by each item.\u00a0 Kroger, as a pilot project, is the only name I recognize on their <a href=\"http:\/\/www.nuval.com\/location\" target=\"_blank\">list of grocery chains<\/a> that use the NuVal system, but they say more will be added in the next year.<\/p>\n<p>How does NuVal calculate its ratings?\u00a0 The website says that their system considers &#8220;30-plus nutrients and nutrition factors \u2013 the good (protein, calcium, vitamins) and the not-so-good (sugar, sodium, cholesterol). And then it boils it down into a simple, easy-to-use number; a number you can trust to make better decisions about nutrition in just a few seconds.&#8221;\u00a0 [<a href=\"http:\/\/www.nuval.com\/how\" target=\"_blank\">source<\/a>]<\/p>\n<p>The first significant clue that NuVal&#8217;s rating system may not be accurate is their including cholesterol in a list of &#8220;not-so-good&#8221; factors.\u00a0 We know, and now science backs it up, that cholesterol is very good for us, in fact essential for our health! It doesn&#8217;t cause heart disease, and it is especially necessary for brain function. [<a href=\"http:\/\/www.cholesterol-and-health.com\/cholesterol-and-health.html\" target=\"_blank\">source<\/a>]\u00a0 For more information about the benefits of cholesterol, you can read articles and books by <a href=\"http:\/\/blog.cholesterol-and-health.com\/\" target=\"_blank\">Chris Masterjohn PhD<\/a>, Mary Enig PhD, or Uffe Ravnskov MD.\u00a0 Look at Real Food Houston&#8217;s <a href=\"http:\/\/realfoodhouston.com\/recommended-reading\/\">recommended reading list<\/a> for some of their books.<\/p>\n<p>What foods should we find at the top of a list of nutrient-dense foods?\u00a0 Foods are nutrient-dense when they contain lots of fat soluble vitamins, like A, D, E, and K, plus protein and minerals.\u00a0 My first choice for a nutrient-dense food would probably be liver, followed by eggs and whole milk.<\/p>\n<p>Why choose liver as the number one superfood?\u00a0 Look how liver stacks up against apples, carrots, and even red meat:<\/p>\n<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/09\/Nutrients-in-Liver.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-6065\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/09\/Nutrients-in-Liver-300x225.jpg\" alt=\"Nutrients in Liver\" width=\"300\" height=\"225\" srcset=\"http:\/\/www.realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/09\/Nutrients-in-Liver-300x225.jpg 300w, http:\/\/www.realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/09\/Nutrients-in-Liver.jpg 1023w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>The only nutrient not higher in liver than all the others is zinc, which is slightly higher in red meat, but in every other nutrient listed, liver is way ahead.\u00a0 Red meat is much higher in all nutrients than apples and carrots, but it can&#8217;t touch the amount of nutrition in liver.\u00a0 One of the best sources on the nutrition in liver is Chris Masterjohn&#8217;s <a href=\"http:\/\/www.cholesterol-and-health.com\/Benefit-Of-Cod-Liver-Oil.html\" target=\"_blank\">article<\/a> on liver and cod liver oil. \u00a0 But you can read more <a href=\"http:\/\/chriskresser.com\/natures-most-potent-superfood\" target=\"_blank\">here<\/a> and <a href=\"http:\/\/articles.mercola.com\/sites\/articles\/archive\/2013\/12\/30\/eating-organ-meats.aspx\" target=\"_blank\">here<\/a> and <a href=\"http:\/\/www.foodrenegade.com\/whats-more-health-apple-or-liver\/\" target=\"_blank\">here<\/a> about the nutrition in liver.<\/p>\n<p>Now let&#8217;s look at what foods get a 100 score from NuVal.\u00a0 Here&#8217;s a sample chart:<\/p>\n<p><a href=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/08\/NuVal-Nutrition-Scores.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-6039\" src=\"http:\/\/realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/08\/NuVal-Nutrition-Scores-243x300.jpg\" alt=\"NuVal Nutrition Scores\" width=\"243\" height=\"300\" data-wp-pid=\"6039\" srcset=\"http:\/\/www.realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/08\/NuVal-Nutrition-Scores-243x300.jpg 243w, http:\/\/www.realfoodhouston.com\/wp-files\/wp-content\/uploads\/2014\/08\/NuVal-Nutrition-Scores.jpg 590w\" sizes=\"auto, (max-width: 243px) 100vw, 243px\" \/><\/a>I don&#8217;t see see liver anywhere.\u00a0\u00a0 For more NuVal scores, look <a href=\"http:\/\/www.nuval.com\/scores\" target=\"_blank\">here<\/a> &#8211; no liver though.\u00a0 Top scores are awarded to farmed fish (93 &#8211; Atlantic salmon) and soymilk (91 &#8211; Silk Soymilk).\u00a0 Soymilk is not a healthy, nutritious food!\u00a0 Read <a href=\"http:\/\/www.westonaprice.org\/soy-alert\/\" target=\"_blank\">Soy Alert<\/a> to learn about the problems with soy. Although broccoli, blueberries, and spinach are good plant foods, they can&#8217;t possibly be more nutritious than liver!<\/p>\n<p>But look what we do find with a NuVal score of 100&#8211;skim milk!\u00a0 Now, there is NO WAY that skim milk should be rated as 100, a perfect nutritious food.\u00a0 Skim milk is a <em>heavily<\/em> processed product that has had all its fat (and, therefore, all of its fat soluble vitamins) removed.\u00a0 Plus skim milk is almost always doctored with additives to make it look and taste better.\u00a0 Real skim milk is somewhat bluish and watery looking and doesn&#8217;t taste very good. Read <a href=\"http:\/\/www.thehealthyhomeeconomist.com\/why-skim-milk-will-make-you-fat-and\/\" target=\"_blank\">here<\/a> and <a href=\"http:\/\/food.thefuntimesguide.com\/2009\/12\/titanium_dioxide.php\" target=\"_blank\">here<\/a> about problems with skim milk.\u00a0 Skim milk has also been associated with <a href=\"http:\/\/adc.bmj.com\/content\/early\/2013\/02\/13\/archdischild-2012-302941.short?g=w_adc_ahead_tab\" target=\"_blank\">excessive weight gain in children<\/a>.<\/p>\n<p>And look how far down the list NuVal rates eggs&#8211;a score of 56!\u00a0 It looks like they still believe the myth that cholesterol causes heart disease and eggs should be avoided.\u00a0 Putting 85% lean ground beef at 38 seems to be another victim of the cholesterol myth.\u00a0 Read <a href=\"http:\/\/authoritynutrition.com\/6-reasons-why-eggs-are-the-healthiest-food-on-the-planet\/\" target=\"_blank\">here<\/a> href=\"http:\/\/articles.mercola.com\/sites\/articles\/archive\/2010\/08\/10\/making-sense-of-your-cholesterol-numbers.aspx\" target=\"_blank\">here<\/a> and <a href=\"http:\/\/www.drsinatra.com\/the-great-cholesterol-myth\" target=\"_blank\">here<\/a> for the real truth about cholesterol.<\/p>\n<p>Conclusion<\/p>\n<p>NuVal will <em>NOT<\/em> help people choose the most nutritious foods and the best foods for their food budget.\u00a0 It will almost certainly encourage some people to buy less healthy foods.\u00a0 NuVal will not help much to improve people&#8217;s health.\u00a0 NuVal is too far behind the research curve and is not using the latest information about nutrition.<\/p>\n<p>After looking through NuVal&#8217;s website and nutrition
