Plus the beans add <a href=\"http:\/\/nutritiondata.self.com\/facts\/legumes-and-legume-products\/4430\/2\" target=\"_blank\">good nutrition<\/a>.\u00a0 They contain a significant amount of B vitamins (thiamine, vitamin B6, and folate) and several necessary minerals, including magnesium, manganese, iron, phosphorus, and selenium.\u00a0 Beans also extend the number of servings making the meal more economical.<\/p>\n<h4>Ingredients<\/h4>\n<p>3 pounds grassfed chili meat or ground beef, [I used <a href=\"http:\/\/www.lawranch.com\/\" target=\"_blank\">Law Ranch<\/a> beef]<br \/>\n2 onions, preferably organic, chopped<br \/>\n1 green pepper, preferably organic, chopped<br \/>\n1 red pepper, preferably organic, chopped<br \/>\n1 jar whole tomatoes, chopped, or diced tomatoes [I used Jovial organic tomatoes, about 18 ounces, in a glass jar]<br \/>\n10 to 12 ounces organic tomato pur\u00e9e or tomato sauce [I used Central Market organic tomato pur\u00e9e]<br \/>\n4 cups cooked <a href=\"http:\/\/realfoodhouston.com\/wp-files\/2014\/07\/21\/recipe-home-cooked-beans-can-boost-your-food-budget\/\">pinto beans<\/a> [I used locally grown (<a href=\"http:\/\/www.justpeachyfarms.net\/password\" target=\"_blank\">Just Peachy Farms order website<\/a>) organic pintos I had cooked and frozen earlier in the year]<br \/>\n1\/2 jar chili powder [about 4 tablespoons or 1 ounce of Frontier organic or Penzey&#8217;s medium hot chili powder] or to taste<br \/>\n1 tablespoon ancho chili powder [I used Penzey&#8217;s]<br \/>\n1 tablespoon sea salt [I used Celtic sea salt and Himalayan pink salt]<br \/>\n1\/2 teaspoon freshly ground organic black pepper (more if you can grind longer)<br \/>\n1 to 2 tablespoons lard or beef tallow, from pastured animals [I used <a href=\"https:\/\/epicbar.com\/animal-oils-overview\" target=\"_blank\">Epic lard<\/a> from heritage pigs, bought locally]<\/p>\n<h4>Preparation<\/h4>\n<p>Over medium heat in a large skillet, brown beef with the lard.\u00a0 I add the lard because grassfed beef tends to be very low fat.\u00a0 Use enough added fat to cook the beef without sticking. When beef is browned, add chopped green and red peppers and onion.\u00a0 Cook until vegetables are tender.\u00a0 Add tomatoes, tomato sauce, beans, and seasonings.\u00a0 Mix well and bring to a simmer.<\/p>\n<p>Simmer for 2 or 3 hours.\u00a0 This recipe makes about 4 quarts of chili. The recipe can be divided into thirds, but this chili is so good leftover that I usually make a large pot to eat for several days.\u00a0 You can freeze extra servings in pint or 22 oz.
