{"id":868,"date":"2011-09-11T12:30:20","date_gmt":"2011-09-11T17:30:20","guid":{"rendered":"http:\/\/realfoodhouston.com\/?p=868"},"modified":"2011-09-10T21:07:36","modified_gmt":"2011-09-11T02:07:36","slug":"forest-metaphor-for-government-food-safety-campaign","status":"publish","type":"post","link":"http:\/\/www.realfoodhouston.com\/wp-files\/2011\/09\/11\/forest-metaphor-for-government-food-safety-campaign\/","title":{"rendered":"Forest Metaphor for Government Food Safety Campaign"},"content":{"rendered":"<p>Piero Sardo has written\u00a0an excellent post about the high cost of the efforts of the experts to ensure the safety of our food by sterilization, i.e., pasteurizing milk, irradiating meat, etc..\u00a0 Sardo is the president of the Slow Food Foundation for Biodiversity.\u00a0 His article, <a href=\"http:\/\/www.slowfood.com\/international\/food-for-thought\/focus\/108578\/sacrificing-for-safety\/q=32F52D?-session=query_session:42F948F9162bb1C233Ws17706450\" target=\"_blank\">Sacrificing for Safety<\/a>,\u00a0 on the <a href=\"http:\/\/www.slowfood.com\/\" target=\"_blank\">Slow Food <\/a>website, compares the efforts to prevent using raw milk for cheese making to a\u00a0someone who wants to build a house in the middle of a forest.\u00a0 The forest is\u00a0&#8220;large, thriving, pristine&#8221;\u00a0but\u00a0the\u00a0person is\u00a0afraid of possible harm from the wild animals&#8211;like wolves, bears and foxes&#8211;that live there, even though attacks from such animals are very rare.\u00a0<\/p>\n<p>As a potential solution to the potential dangers, Sardo supposes that the new forest dweller has a &#8220;gas that exterminates every living creature&#8221; and uses it.\u00a0 The dangers, i.e., wild\u00a0animals,\u00a0have been eliminated, but the forest is now &#8220;dead, silent and boring.\u00a0 In the long term it couldn&#8217;t even survive.&#8221;\u00a0 What was &#8220;a living, natural system, able to self-regulate and survive most calamities and environmental disasters&#8221; is now &#8220;an unnatural monster, created only to entertain you and to guarantee your peace of mind.&#8221;\u00a0Sardo\u00a0goes on to compare the dangers in the forest to the dangers of raw milk.\u00a0 &#8220;The vegetation represents the fats, caseins, minerals and so on, while the forest fauna represents the microflora present in the milk and the surrounding environment.&#8221;\u00a0 When you pasteurize milk, you kill everything and turn &#8220;something living and vital&#8221; into an &#8220;inert, dead substance.&#8221;<\/p>\n<p>The expert will assure you that the killing is progress and that progress comes with\u00a0&#8220;certain losses (of taste, naturalness, variety),&#8221; but the losses ensure a very high &#8220;level of food safety.&#8221;\u00a0\u00a0Sardo, in his\u00a0forest metaphor, compares the killing\/pasteurization to removing the wolves and bears from the forest, which eventually destroys the forests so that\u00a0they &#8220;disappear, the wolves die out, the bears and boars are forced to scavenge garbage to find food.&#8221;
