one of my comfort foods.\u00a0 It can be a meal in one with the vegetables, meat, and sauce on top.\u00a0 To make the traditional meatloaf with breadcrumbs more nutrient dense and make it safe for those who can&#8217;t (or don&#8217;t want to) eat grains, here&#8217;s a version that\u00a0uses almond flour or coconut flour instead of breadcrumbs.\u00a0 Since it tastes just like the traditional meatloaf, my family loves it as much as I do, so I usually make a double recipe.\u00a0 Here&#8217;s how I make meatloaf:<\/p>\n<p>1 pound ground beef,\u00a0local <a title=\"Law Ranch Cattle Company\" href=\"http:\/\/lawranchcattlecompanytx.farming.officelive.com\/default.aspx\/\" target=\"_blank\">Law Ranch<\/a> grassfed beef<br \/>\n1\/2 cup chopped organic onion<br \/>\n1\/2 cup chopped organic red or green pepper (farmers market)<br \/>\n1\/2 cup chopped organic celery<br \/>\n1\/2 cup almond or coconut flour (either one works well)<br \/>\n1\/2 cup grated cheese (I use finely shredded parmigiano reggiano)<br \/>\n1\/2 teaspoon salt (Celtic Sea Salt)<br \/>\n1\/4 teaspoon freshly grated organic black pepper<br \/>\n1 teaspoon organic prepared mustard<br \/>\n1\/2 cup tomato sauce (Muir Glen organic)<br \/>\n2 eggs, from pastured chickens<\/p>\n<p>Heat oven to 350 F.\u00a0 You can use a loaf pan or an 8 X 8 or 9 X 9 glass dish.\u00a0 When I double the recipe, I bake the meatloaf in\u00a0a 9 X 13 pan.<\/p>\n<p>Mix the onion, celery, pepper, almond (or coconut)\u00a0flour, salt, black\u00a0 pepper, mustard, shredded cheese, half the tomato sauce, and eggs together.\u00a0 [Note: I don&#8217;t usually measure the onion, celery, or pepper.\u00a0 I just chop and estimate.]<\/p>\n<p>Add the ground beef and mix well.\u00a0 I usually use a plastic food handler glove and mix with my hand.<\/p>\n<p>Put the mixture in the pan and spread the remaining tomato sauce over the loaf.<\/p>\n<p>Bake for\u00a01 hour and 10 minutes.\u00a0 Cool slightly (my family usually doesn&#8217;t want to wait for it to cool, and it works out fine).<\/p>\n<p>The amount of tomato sauce can be\u00a0doubled if you like your meatloaf
