Since we have plenty of time right now for slower cooking, we decided to try a lamb stew. Although the basic ingredients for this recipe are typical for stew, the seasonings are Moroccan and are used in a <a href=\"http:\/\/www.realfoodhouston.com\/wp-files\/2012\/11\/11\/moroccan-lamb-tagine-with-olives-and-lemons\/\">Lamb Tagine recipe<\/a> I posted a few years ago.\u00a0 The combination was delicious!<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>2 pounds pastured lamb, cut in chunks (our source is <a href=\"http:\/\/www.wapf-houston.org\/wapf-houston-wp\/local-food-milk\/#beef\" target=\"_blank\" rel=\"noopener noreferrer\">Spring Hill Farms<\/a>)<br \/>\n4 to 5 small organic red potatoes, halved or quartered<br \/>\n1 large organic onion, chopped<br \/>\n4 to 5 organic carrots, cut in chunks<br \/>\n1\/4 teaspoon ground organic ginger<br \/>\n1\/4 teaspoon organic curry powder<br \/>\n1\/4 teaspoon ground organic nutmeg<br \/>\n1\/4 teaspoon ground organic cinnamon<br \/>\n1 teaspoon unrefined sea salt (I use Celtic Sea Salt)<br \/>\n1\/2 teaspoon ground organic black pepper<br \/>\nGrated rind of one organic lemon, optional<br \/>\n1 tablespoon pastured lard or other traditional fat<\/p>\n<p><strong>Preparation<\/strong><\/p>\n<p>Melt lard in a large skillet or stew pot.\u00a0 Add lamb and brown lightly over medium heat for about 10 minutes.\u00a0 Add seasonings. Cover the pan and simmer over low heat for about an hour.\u00a0 Add vegetables and optional lemon rind.\u00a0 Simmer covered for another 30 minutes or until vegetables are tender.<\/p>\n<p>We served our lamb stew with homemade drop biscuits made with Einkorn flour and butter, fermented green olives, and salad.\u00a0 Fresh lemon juice is a good addition to the stew when served.<\/p>\n<p>We use local meat and produce whenever possible.\u00a0 For Houston area food sources, look at the <a href=\"http:\/\/www.wapf-houston.org\/wapf-houston-wp\/local-food-milk\/\" target=\"_blank\" rel=\"noopener noreferrer\">Local Food &amp; Milk page<\/a> of the Houston chapter of the Weston A.
